The owner chef, Mr. Kazuma Yagi, trained for 16 years at Kitcho in Arashiyama, Kyoto and for 8 years at Hiiragiya Ryokan before opening Kanzan. He was sous chef at Kitcho and head chef at Hiiragiya Ryokan, and has honed his skills at famous restaurants that have been listed in Michelin and selected by Michelin. At Kanzan, the chef Mr. Kazuma Yagi is particular about Kyoto vegetables and uses vegetables grown in Shugakuin Rikyu, an area rich in water and soil. Kanzan strives to provide a delicious and enjoyable dining experience. Please enjoy to your heart’s content an authentic kaiseki cuisine that can only be found in Japan, including kaiseki dishes made with fish and wagyu beef, dishes that showcase the Japanese seasons, and dishes that produce traditional Japanese events at Kanzan.

Our dishes are flavored with bonito based “dashi” broth.
There is no substitute for this hidden ingredient.
We are able to replace SEA FOOD and MEAT dish with TOFU and seasonal vegetables.
BUT we still cook them with bonito based “dashi”.
